A euro cylinder is the long, profile-shaped lock body you see in most modern UPVC and aluminium doors. To practise picking one at the bench you want it held still, with the keyway facing you and nothing blocking the plug from turning. The trouble is the cam, the metal tab that sticks out underneath. Clamp the cylinder directly and that cam jams against the vice jaws, so the plug cannot rotate and the lock will not give even when your pins are set.
